
5 cups raspberries, divided
1 cup water, divided
1 cup sugar
3 tablespoons cornstarch
2 tablespoons lemon juice
1 10 inch angel food cake
2 8 ounce packages cream cheese, softened
1 cup sugar
1 8 ounce cool whip, thawed
In saucepan, combine 2/3 cups raspberries and 2/3 cups water. Simmer uncovered 3 minutes. Strain berries and discard seeds. (I don't have a strainer, so I just throw them in.) Set juice aside.
In other pan, mix sugar, cornstarch, and 1/3 cup water. Add berry juice. Boil on medium heat. Cook and stir 2 minutes. Remove from heat and stir in lemon juice. Cool.
Crumble cake into a 9x13 inch pan. In a bowl, mix cream cheese and sugar until fluffy. Fold in cool whip. Mash down cake with hands and spread cream cheese over cake. Add remaining raspberries to cooled glaze and carefully stir until all the berries are coated. Pour glaze on cake.
I like this recipe because: I have a thing for raspberries.
My least favorite thing about this recipe is: It is SO rich with all the cream cheese. If you don't want the cream cheese layer super dooper thick, I would use 1 package instead of 2.
